If the first impression is effortless, the room feels alive, and operators can deliver a great experience night after night. In 2025, we partnered with hospitality teams to design spaces that balance narrative, function, and the details guests feel, but don’t always notice.

From a legacy Chicago institution refreshed for its next chapter to new dining destinations rated as some of the best in the country, these projects reflect how we approach hospitality: Designing an experience through layering the story, choreographing the flow, and delivering without the headaches. Our teams support projects end-to-end across architecture, interiors, branding, procurement, project management, and construction administration.

2025 Highlights

Bar Sotto design an Italian disco room hospitality projects

Bar Sotto

A reimagining of a storied Chicago space in the Italian Village, Bar Sotto was designed to honor the past while making space for the future. The refresh leans into history (exposed brick and steel) while adding warmth, craft, and story through materiality, art, and details, down to custom millwork, wall coverings, stained glass integration, and bespoke finishing touches.

What we focused on

Preserving what made it iconic, but then upgrading the experience without erasing its “been here forever” character.

Mobilizing a trusted vendor network (muralists, millworkers, artisans) to execute storytelling with real craftsmanship.

Hotel Julian

Hotel Julian was designed as a "composed like a work of art" where heritage meets imagination, with a bold guest experience expressed through textures, light, and cinematic references. The project includes the lobby, guest rooms, and the F&B experience, including Carlotta’s Cocktail and Wine Bar.

How we delivered value

A collaborative approach with Oxford Hotels & Resorts, supporting: architectural services, interior design, project management, procurement, and construction administration.

Layered experiential design that creates mood and flexibility across dayparts.

Small Cheval

In 2025, Small Cheval opened two locations, including Lincoln Park, and a highly-watched project in Wilmette’s former train station depot with Dunne Kozlowski’s team involved in design and public-facing renderings during the approval process.

What we focused on

A sensitive approach that respects a landmark building while still delivering brand presence and operational requirements.

Navigating stakeholder input and approvals, including high-visibility exterior signage considerations.

The Greggory

Designed as a new gathering place in the Chicago suburbs that is refined, warm, and built around the theater of live-fire cooking. Key features include an open kitchen with a show-stopping hearth, an expansive wine cellar (3,100 bottles), and a serpentine bar that anchors the experience from arrival to last call. In 2025, The Greggory was named one of the top 50 steak restaurants in North America.

What we focused on

Designing “energy zones” (lively, social, intimate) so the room works for weeknights and celebrations.

Making the arrival sequence truly special (entry, wine moment, bar moment) without slowing service.

2026 Banchet Awards for Best Design Dunne Kozlowski

Adalina Prime

A sophisticated new steakhouse experience in the heart of Fulton Market, located at 360 N Green Street, designed to stand out in one of Chicago’s most design-forward dining districts. Adalina Prime has been named a 2026 nominee for Best Design at The Banchet Awards, Chicago’s signature celebration of culinary excellence.

What we focused on

Creating a destination-worthy environment that matches Fulton Market’s energy and elevated expectations.

Coordinating a complex build environment and delivering a polished, guest-ready experience.

Blufish Schaumburg 

Blufish Schaumburg provides an innovative dining experience that caters to the modern palate and aesthetics, focusing on Asian cuisine with a unique twist. Each dish is a testament to an adventurous spirit that excites diners seeking new and unique experiences. Both sophisticated and welcoming, ensuring a refined yet inclusive ambiance that resonates with our discerning clientele.

What we focused on

A refined-but-approachable atmosphere that supports both everyday dining and special occasions.

Visual identity and ambiance that match the brand’s positioning.

Design that feels right and works hard.

Across these projects, the common goal was the same: create experiences with emotional pull, built from layered details (lighting, art, textures, and storytelling elements), while supporting real operations, seating variety, guest flow, and moments that make people want to return.

During the day, Vicolo will offer an array of rustic Italian dishes and freshly baked pastries, with a to-go menu of handmade pasta dishes available for the on-the-go downtown residents. As the sun sets, Vicolo will transform into a restaurant, with a craft cocktail menu that complements the locally sourced dinner offerings.

Located in the most exclusive center of the city in Miami - World Center, The Clayton private members social club in Miami is 10,000 square feet and 2 floors of discerning luxury for the true cigar connoisseur.
